    I’ve admired about every Compression of Yum compound I’ve approved but this was not a champ 🙁 The meat was actual fibrous and chewy and candidly didn’t accept abundant acidity which I was abashed by! I grew up bistro Italian beef in Chicago and this is so actually adorable it reminded me of those sandwiches growing up. I put a little added beef borsch in the compound (1/2 cup or so?) and froze it with the aqueous so the meat didn’t get freezer burn.
